The menu items correspond to the 8 questions Thomas Acquinas posed in his Summa Theologiae as those matters that must be specified in the defining of anything and everything. Many centuries later they were adopted by anglo-saxon culture, more or less consciously, through their introduction of the "5 Ws", which, in fact, correspond to 5 of Thomas's 8 questions.
